When I think of the perfect breakfast, it must include two things: fresh fruit and peanut butter. I grew up eating cereal for breakfast, as a school snack, and a late night sweet treat. I was shocked when I got older to see how many artificial ingredients were in some of my most loved cereals. I created this recipe because I wanted the taste of real, natural peanut butter in cereal instead of artificial flavors and refined sugar. It’s sweet, crunchy, and loaded with peanut butter. My favorite peanut butter is JIF natural, but any peanut butter will do! This is great as its own as a snack, or as a breakfast with fresh berries and milk.
Peanut Butter Cereal Mix
- 2 cups rice cereal
- 2 cups oat cereal
- 2 cups rice square cereal
- 1/4 cup peanut butter
- 1/4 cup honey
- Fresh sliced strawberries
- Milk (regular or alternative)
Preheat oven to 350°F. Add the cereal to a large bowl.
Combine honey and peanut butter in a small saucepan over medium high heat. Cook the honey and peanut butter mixture until bubbly, about 3 minutes.
Slowly drizzle the honey and peanut butter mixture over the cereal, constantly stirring so it is evenly coated. Line a baking sheet with parchment paper and spread the cereal on top. Press down gently on the cereal mixture with your hands to compact, this will make for chunky cereal.
Bake for 12-15 minutes, stirring halfway through baking, until golden brown. Let cool and store in an airtight container. Serve with fresh sliced strawberries and milk, or enjoy on its own as a snack.
