Get ready for this one guys…buffalo. pizza. on a cauliflower crust. To be honest, cauliflower crust can feel a little “meh” on it’s own, so loading it up with flavor-bomb toppings is the way to go. I was inspired by an article Bon Appetit did on homemade buffalo chicken pizza. When I read it I thought buffalo chicken would be good on a cauliflower crust as well. Let me tell you, this recipe was AWESOME. Rarely do I eat a whole recipe at 3pm after I’ve already had lunch, but I just couldn’t stop myself, it was that good!
Would you look at that? Cauliflower crust you can actually pick up with your hands, loaded with fall-apart tender chicken and perfectly spicy buffalo sauce. Slices of celery add a cooling crunch, and give a nod to those sad little celery sticks they give you at a wing joint. Obviously, homemade ranch was involved in the making of this pizza, and is absolutely necessary.
Buffalo Chicken Cauliflower Crust Pizza
- 1 recipe Cauliflower Crusts (2 crusts)
- 2 cups shredded rotisserie chicken
- 1/2 cup Frank's buffalo sauce
- 1 cup shredded mozzarella or pizza blend cheese
- 1/4 cup blue cheese crumbles (optional)
- 3 stalks celery, sliced thinly
Prepare cauliflower crusts according to recipe directions. Combine the shredded chicken with the buffalo sauce and stir to coat evenly.
Spread an even layer of cheese on both crusts. Divide the buffalo chicken between the two pizzas, making sure to spread evenly. Top with blue cheese (if using) and bake at 425º F for 5-10 minutes, until the cheese is melted and the chicken is warmed through.
Remove the pizzas from the oven, and drizzle with lots of ranch and additional buffalo sauce. Sprinkle celery slices over the top, cut into slices and serve!
